     Traditional Recipe for Matter Panir 
     
(Peas & Indian Cheese)

1 cup Ridgecrest Panir cheese, cut into bite size cubes
2 cups peas 
2 tbsp butter or margarine
1 large onion, finely minced 
1 tsp turmeric
1 tsp garam masala (from the Indian spice section of grocery store)
˝ tsp cayenne pepper, or to taste 
2 tsp Hungarian paprika 
˝ tsp garlic powder 
1 tsp salt or to taste
˝ cup tomatoes, finely chopped 
2 cups of water, or to desired consistency
˝ tbsp fresh coriander, finely chopped 

To prepare Panir, cut into bit sized pieces and sauté in a little cooking oil on medium heat until golden brown, as an alternative try broiling the cubes in the oven and set aside.  Fry minced onion with butter until golden brown. Add turmeric, garam masala, cayenne pepper, and paprika. Stir constantly until butter separates from sauce, add a little water if required, add garlic, tomatoes and salt, continue to cook stirring until tomatoes are soft, add the peas and cook until peas are half cooked (about 6 minutes). Add panir cubes and water. Cover and simmer for about 10 minutes.

Serve over rice or noodles, garnish with freshly chopped cilantro, and add Nann (a leavened Indian flat bread) as it makes a nice accompaniment to this meal.
